The dark, violet colour of the wine reflects the concentrated, supple aromas and flavours of ripe black fruits and floral notes, notably violet. The baking spices that follow the fruits are accompanied with smooth, heartwarming tannins that create long finish on the palate.
This wine can be paired with warming, hearty dishes such as braised lamb shoulders, beef bourguignon, and lasagna.
This Saint Joseph is 100% Syrah and the grapes are destemmed between 50-80%. Coming from vines 50 years of age, alcoholic fermentation and maceration occur in stainless steel tanks for 25 days. Punch downs are done twice a day for 5 days. The wine is then matured for 16 months in 228-litre and 600-litre barrels.

The Vallets have been cultivating vines for over 150 years but it was not until 1990 when Anthony’s father, Louis left the cooperative to start his own domaine. Since joining his father in 1998, Anthony now possesses 14 hectares of vines, producing 8 different wines that showcase their terroir. His expertise in the vineyards and in the winery reflect the geographical and climatic differences in each of his vineyards.
