The wine, a blend of 60% Marsanne and 40% Roussanne, is crafted from manually harvested grapes fermented with wild yeasts. It matures for 10 months in oak barrels aged 1 to 5 years, with an annual production limited to 6,000 bottles.

Aurélien was only 22 years old when he first decided to found his own domaine in 2002. Although he does not come from a winemaking family, working in the vineyards throughout his teenage years allowed him to acquire, develop and hone his skills on the field as well as in the winery. While starting off with merely 1.2 hectares of rented vines and vinifying at his friend and mentor François Villard, he steadily purchased and replanted vineyards, building up to 8 hectares as of today.
Aurélien has been practicing organic farming since 2004 and focuses on the pure expression of the grapes and vineyards in his winemaking. Using native yeasts, limiting new oak and bottling without fining or filtration are only a few techniques he uses to articulate his passion.
